About this deal

Lighter than a pound cake and sweeter than a slice of bread, this grinch green cake looks like an ordinary loaf on the outside, but when you cut into it, there’s a hidden heart inside. Mix together all dry ingredients (flour, baking powder, sugar, and salt) in a stand mixer with a paddle attachment until fully combined.

To get the perfect shade of green, I used a mixture of Americolor Electric Green Gel color and Americolor Leaf Green Gel color. Add in the salt, baking powder, instant espresso mixture, and vanilla extract. Mix on a low speed until incorporated. I also decided to add in some rainbow sprinkles for a pop of color, and swapped the chocolate chips for mini white chocolate chips. The next time I make this cake, I will add those amazing Bake-Even Strips around the pan while it is in the oven to help the cake bake evenly. See how brown the sides are? I am sure it is the food coloring, but the Bake-Even Strips will help control the heat so the sides won’t brown as much. Place your bottom 8” round on your cardboard cake base. Cover the top generously with your white butter cream. Add your next layer and with your spatula spread a thin layer of white buttercream over the top and sides of both layers. This layer of frosting does not need to be extremely smooth as it will be covered with your fondant.Bake: Bake at 350 degrees Fahrenheit for 45 minutes. Allow the loaf to cool in the pan for 30 minutes to an hour. Mix together a small amount of green gel food coloring with a few drops of vanilla to create a watercolor type paint. Use a fine tip paint brush to paint on the face of the Grinch. You can create the same adorable face you see here or get creative! You do want this green to be slightly darker than the fondant. Allow the “paint” to dry. In all three version of the Grinch, his fur is part of his identity. I wanted to create some texture, but I didn’t think that piping on fur would be quite right. That would make him too hairy. For the Grinch’s face, I found a reference picture online and printed it out. Then I measured the size of my cake, and practiced drawing the face, that size, on a piece of paper. This helped me to know how big to make each element. You can practice a few times, or practice piping it on a piece of parchment paper, before you try it on a cake. Ingredients for Grinch Cake:

Bake on parchment paper or a silicone baking sheet at 350 degree Fahrenheit for about 7 minutes, or until the edges are golden brown. Isn’t that stunning?! The combination of the bright green cake and the bold red heart gets me every time. Seeing this cake makes MY heart grow three sizes, too.

Add in vanilla and oil, and mix at a low speed until fully incorporated. Scrape down the sides of the bowl with a spatula, then beat on low speed for about 15 seconds (the key is to mix until the ingredients are JUST incorporated, so that the batter isn't over mixed).

I used a 2-inch heart-shaped cookie cutter. You could use a larger one if you’d like or even a range of sizes so that the hearts vary from slice to slice (remember how the Grinch’s heart grows?). Once the cake is baked, let it cool and then cut the cake into slices. Then, use a heart-shaped cookie cutter to cut out as many hearts as it takes to lay them face to face from one end of the pan to the other end. Make sure it is a snug fit but leave a little room at each end for the green cake mix. Finally, don’t expect perfection! The heart is a soft(ish) cake pop mixture, and you’re basically carving inside the cake on a wing and a prayer. It’s probably going to be a little wonky. But it will also be amazing, and charming, and that’s good enough! This Grinch Cake, then, represents that duality of character. The outside is a simple line drawing of his face, set in its trademark scheming grin… Place the green batter around the heart cutouts. Tap the pan on the counter so the batter will fall down the sides of the heart shapes.
