Packed with aromatic ginger, tamarind and turmeric, use this Laksa pasta to easily create Malay inspired curries in your kitchen. The amount of laksa paste required will depend on the brand you use – some have more intense flavours than others. It has more depth of flavour than other brands, the proper Malaysian “funk” that is so addictive about Laksa. So the coconut broth Laksa that is so wildly popular here in Australia is actually not widely available in Malaysia. This tantalizing broth gets its brilliant red color from the laksa paste, a medley of bold spices, aromatics and flavorings.

Some are great as-is, while others just need the addition of meat, santan (coconut milk), oil, vegetables, or potatoes. and that your mum became a fan of it too (my mum has similar dislike for spiciness) - great to hear.

Using the poaching liquid from the chicken is also another great way to add chicken broth to the laksa soup. We had packages of laksa paste stashed frozen in our deep freezer from whenever a relative would visit Malaysia or Brunei. The Nonya Sambal Chilli (Glory Brand) provided a spicy kick that beautifully complemented the richness of the coconut milk.
