CHILL, CHILL, CHILL! The key to any layered cake is to keep it chilled every step of the way. But when working with HALF of a cake (with half the stability), it was especially crucial to have a completely chilled cake from start to finish. In the video, you can see my cake is leaning a little bit. That's because I didn't have the time to let it chill completely! If I had taken the time to chill it after each step, I'd EASILY have a perfectly straight standing cake. Use some more whipped cream to add another thin layer of frosting to the cake for a cleaner finish. Spread or pipe two dots of frosting onto a cake board. Push half a cake layer into one dot to attach it to the board. Then spread or pipe frosting along the cut edge and press another half of cake into it. It will attach to the cake and to the other dot of frosting on the cake board. You don’t need to have a baby to celebrate a half birthday.
